Cinnamon Caramel Chocolates

So, I made these cinnamon caramels last week. I thought they were pretty good.. but they were also a lot cinnamon-y, so a little tasted like a lot. (They kind of taste like Hot Tamales or chewy Red Hots). After they had been sitting for a few days, I decided that I needed to do something else with them. And what better than to add some chocolate!? So I mixed together equal amounts of milk and semi-sweet chocolate chips on a double boiler, added a little bit of olive oil to make it a bit thinner, and then I dipped the caramels in the chocolate. It was pretty much a chewier version of chocolate dipped cinnamon bears... which I love.

I should have taken a picture of the inside so you could see the red, but unfortunately... I did not. Just imagine red caramel. (One day if you're lucky, I'll get a better camera and I'll take better pictures. Sorry that that day has not yet come).
