Mango Berry Macarons

These did not turn out quite as expected. The cookie part just kept puffing up so much! And I couldn't figure out why. It was frustrating. Also, they do take forever to make.
They tasted better than they turned out looking. Still... Last time I made macarons, I didn't have quite as many problems. I still don't know what went wrong. And there is still a question of them being worth the time and effort it takes to make them. I am determined to conquer the macaron, though. This won't be my last encounter with them.

Try making them if you want! I used this recipe. (I tried to grind dried mango and it did not work out well for me. So I just left that part out of the recipe).

Hershey's Chocolate Cupcakes

These cupcakes I made way back in the summer time. (I am slow).

I used the Hershey's Perfect Chocolate Cake recipe for the cupcakes and Our Best Bites recipe of chocolate frosting. They were rich, but delicious!

Chocolate PB Cup Cupcakes

This was another treat I made for birthdays at work. (We celebrate them once a month).

These are chocolate cupcakes with a Reese's Peanut Butter Cup center, frosted with a chocolate peanut butter frosting and half of a Reese's Peanut Butter Cup on top.

I could eat these everyday.

Peppermint Poke Cake

I made these peppermint poke cakes at the beginning of December for birthdays at work.

Here's what I did:
Used a chocolate cake mix, followed instructions on box, baked it, let it cool for 15 minutes.
Poked tons of holes in the cake, using the handle of a wooden spoon.
Opened a can of sweetened condensed milk and added about 3/4 teaspoons of peppermint extract to it.
Poured it into the holes in the cake.
Made a recipe of hot fudge and added peppermint extract to it.
Poured it into the holes in the cake.
Refrigerated overnight.
Made whipped cream and a white chocolate ganache.
Combined whipped cream and white chocolate ganache after ganache was cooled, added some peppermint extract, and spread over the cakes.
And then I rough chopped Andes Peppermint Crunch candies and sprinkled them over the top.

I was pleased that it turned out!

Also in December, my cute roommates and I went to the Tabernacle Choir Christmas concert! It was great fun, and the concert was incredible.

White Chocolate Candy Cane Cheesecake

I have been baking! Oh, so much. Of course I have. And now I am finally going to talk about some things made from forever ago.

One of my necessities at Christmas time is trying new peppermint flavored desserts. This recipe was a white chocolate candy cane cheesecake. I didn't wait for it to refrigerate quite as long as it should have the first time I tasted it. It didn't taste so great. The next time I tried it, it was fully cooled and it was delicious! Lesson learned. It's hard to wait, but it's worth it.

Recipe from Once Upon a Cutting Board. (Only variation I made was using whipped cream instead of Cool Whip).
